Sugar Free Banana and Carrot Cake

Makes 1 cake

Make this tasty cake in a loaf tin so that it can be cut into small slices for little hands to make an early year’s sugar-free tea time treat. Store slices in an airtight tin or freeze for later. Alternatively, this recipe can be baked in a round tin. Topped with a candle, this would make a great sugar free 1st Birthday cake. For a sweeter cake, simply add one or two tablespoons of honey when you mash the banana.

Vegetarian, Wholemeal, Without crystal sugar


Change Quantities:
  1. Rub some oil around the inside of a 2lb/1kg loaf tin or 20cm/8” deep round tin or line it with a loaf liner. Pre-heat the oven.
  2. Put the flour and cinnamon into a bowl and stir to combine.
  3. Finely grate the carrot into a mixing bowl.
  4. Add the banana and vanilla to the carrot and mash everything together.
  5. Break the egg into the bowl and beat until combined.
  6. Melt the butter and stir this in.
  7. Add the prepared flour and cinnamon and mix everything together.
  8. Pour into the prepared tin and smooth the top.
  9. Bake for 40 - 45 minutes.

190°C, Fan 170°C, 375°F, Gas 5
