About this recipe:
Wholemeal Spelt flour combines with the natural sweetness of honey and the spicy, warming flavour of cinnamon to make these soft eating cookies a real treat.
Equipment:
2 x baking trays and mixing bowl
Ingredients:
175g Doves Farm Organic Wholemeal Spelt Flour
½ tsp Doves Farm Baking Powder
2 tsp ground cinnamon
100g honey
100ml sunflower oil
oil, for trays
Method:
190°C, Fan 170°C, 375°F, Gas 5
- Pre-heat the oven.
- Rub some oil around the inside of a two baking trays or insert a baking liner.
- Measure the flour, baking powder and cinnamon into a bowl, stir to combine then sieve into a mixing bowl.
- Tip any bran left in the sieve into the mixing bowl.
- Add the honey and oil and stir to make a thick batter.
- Take a good teaspoon of batter and place on the prepared baking trays. Repeat with the remaining batter, leaving space for expansion of the cookies.
- Bake for 12-15 minutes.

Sooo easy to make. Basically two steps, and super-quick to mix and cook. Having made this, I will also be trying it next time substituting ginger for cinnamon. But i suspect that you could use the basic recipe with other small changes (choc chips, raisins?) Great for kids to make (supervised) because it is so simple.. but makes 11-15 nice cookies that any child would be really pleased with

These were so quick and simple to make. I also reduced the honey to 65g, just the right amount of sweetness for us. Will definitely be making them again and trying other recipes with spelt flour

Very very easy to make. But they are better with less sweetener. Second batch worked well today with 80g honey. Could even do with less. I burnt the first batch. Misread the temperature. So be careful!

I saw a young girl on youtube make these cookies so I decided to try it, since I had just bought my spelt flour.. She misread teaspoons for tablespoons so i was a little over in my ingredients, but they still turned out pretty good. Easy to make and delicious, healthy cookies! Thank you!

This is such a simple recipe which gives perfect results. These cookies are a great favourite with my family and friends. I also vary the ingredients , replacing the cinnamon with ginger, ground or crystallised, and adding dark chocolate chips. Try dipping in melted 80% dark chocolate to finish off. It's sooo good!
