Line a baking tray with parchment and pre-heat the oven.
Sieve in the flour, baking powder and cinnamon into a bowl and stir to combine.
Add the honey and oil and stir to make a thick batter.
Take a good teaspoon of batter and place it on the prepared baking tray. Repeat with the remaining batter, leaving space for expansion cookie to expand.
Bake for 12-15 minutes.

I saw a young girl on youtube make these cookies so I decided to try it, since I had just bought my spelt flour.. She misread teaspoons for tablespoons so i was a little over in my ingredients, but they still turned out pretty good. Easy to make and delicious, healthy cookies!

This is such a simple recipe which gives perfect results. These cookies are a great favourite with my family and friends. I also vary the ingredients , replacing the cinnamon with ginger, ground or crystallised, and adding dark chocolate chips. Try dipping in melted 80% dark chocolate to finish off. It's sooo good!
