About this recipe:
These eye-catching party pizza pieces are fun to make and great for many types of gatherings. You can be creative with the toppings using some or all of the suggestions depending on the occasion.
Equipment:
2 x large baking trays and 2 x mixing bowls
Ingredients:
WHITE SPELT PIZZA SPONGE
250g Doves Farm Organic White Spelt Flour
½ tsp Doves Farm Quick Yeast
½ tsp sugar
200ml tepid water
WHITE SPELT PIZZA DOUGH
175ml tepid water
250g Doves Farm Organic White Spelt Flour
½ tsp Doves Farm Quick Yeast
1 tsp salt
1 tbsp olive oil
flour, for dusting
oil, for trays
PARTY PIZZA TOPPING IDEAS
red pepper, chopped
yellow pepper, chopped
red onion, sliced
mini tomatoes, halved
radishes, sliced
olives, pitted
red cabbage, sliced
mushrooms, sliced
sweetcorn
anchovy
chorizo cubes
feta cheese, cubed
mini mozzarella, halved
oregano
salt
oil
Method:
200°C, Fan 180°C, 400°F, Gas 6
White Spelt Pizza Sponge
- Put the flour, yeast and sugar into a mixing bowl and stir to combine.
- Add the water and stir into a slack dough.
- Invert a large bowl over the paste and leave in a warm place for 12-24 hours.
White Spelt Pizza Dough
- Add the water to the pizza sponge and stir into a thick batter.
- Add the flour and yeast and stir to combine.
- While still craggy and lumpy, sprinkle on the salt and continue mixing.
- Using your hands, gather everything together into a sticky mass of dough.
- Knead the dough in the bowl, or on a work surface, for 100 presses. Avoid adding flour if possible.
- Sprinkle the oil over the dough, run a spatula around the outside of the dough and turn it over a couple of times so the dough mass is covered in oil.
- Invert a large bowl over the dough bowl and leave it in a warm place for the dough to double in size, which will take about 1-2 hours.
- Rub a little oil onto your fingers, pick up the far side of the dough, pulling and stretching it up as far as it will go, then fold it forward onto itself.
- Turn the dough a quarter to the left or right.
- Repeat the action of lifting and stretching the dough then folding back onto itself another four times, turning the dough after each stretch.
- Tuck the edges of the dough under to make a ball of dough sitting in the bowl.
- Cover with an upturned mixing bowl and leave until roughly double in size, 1-2 hours.
White Spelt Party Pizza
- Select a variety of toppings halving, slicing or dicing as necessary and making a separate pile for each.
- Rub some oil around the inside of two large baking trays or insert a baking liner.
- Gently divide the dough between the two baking trays.
- Without pressing down on the dough, gently shape it into a rectangle to cover the full surface.
- Using a knife cut the dough on each tray into 18 small rectangles.
- Place small piles of topping in the middle of each rectangle.
- Scatter the oregano over the top, season with salt and pepper and leave in a warm place to prove for 30 minutes.
- Pre-heat the oven 20 minutes before you are going to bake.
- Drizzle oil over the top.
- Bake for 15-20 minutes until the dough is cooked and the toppings are sizzling.
- Transfer the pizza pieces to a cooling rack or serving tray.
- The pizza pieces can be re-heated in a hot oven for 3-4 minutes before serving.
