Rhubarb in hand when I realized I had no plain four. Looking in the cupboard I find Spelt or Oat from this fab company. I think 'Hey, why not. I get the Oat flour out and boy am I glad I did! The tastiest toffee-like taste, helped by the sticky brown sugar Rhubarb Crumble ever! It didn't quite make bread crums like plain flours does but that didn't matter, my 4 ingredients Crumble was a huge success!!

My Mum used to make the most delicious shallow fried fish when I was a child, and try as I might I could never replicate it. Nowadays, I usually microwave fish; but a few weeks ago I had picked up chunks of cod instead of flattish fillets and decided to have another go at frying. So ... beaten egg in one dish, I reached for my flour box and noticed the oat flour (purchased, I am ashamed to admit, some time before) and thought, 'Why not?' The result was really, really tasty and the flour just seemed to stick and fry so much better than wheat flour. So that's it now - regular fried fish and a mega happy hubby!
