Chocolate Cake

Makes 1 20cm/8" Cake

This delicious Chocolate Cake is perfect for many events, such as school fetes and birthdays.  Alternatively this layer cake is just as perfect sandwiched together with raspberry jam.

Ingredients

Change Quantities:
  • 200g butter
  • 200g caster sugar
  • 4 eggs
  • 3 tbsp cocoa
  • 200g Doves Farm Organic Self Raising White Flour
  • 3 tbsp milk
  • 1 tsp vanilla extract
  • FILLING
  • 50g unsalted butter
  • 75g icing sugar
  • 1 tbsp cocoa
  • ICING
  • 50g chocolate
  • 25g butter
  • 1 tbsp golden syrup
  1. Add the butter and caster sugar into a mixing bowl and beat together until light and fluffy.
  2. Beat in one egg followed by a spoon of cocoa. Beat in the second and third eggs, adding a spoon of cocoa after each one. Beat in the final egg.
  3. Sieve the flour into the bowl then stir it into the mixture.
  4. Add the milk and vanilla and stir these to create a batter that just drops off a spoon.
  5. Divide the mixture between two prepared tins.
  6. Bake in the pre-heated oven for 20-25 minutes.
  7. Turn the cooked cakes out onto a wire rack and leave to cool.
  8. To make the filling put the unsalted butter into a bowl and beat until it softens. Sift the icing sugar into the bowl and mix until it is combined. Sift the cocoa into the bowl and beat that in.
  9. Spread the filling over one cold cake layer then place the other cake layer on top.
  10. For the topping put the chocolate and unsalted butter into a bowl and gently melt them together. When the chocolate is melted stir in the golden syrup and immediately spread the topping over the cake.

Temperature

180°C, Fan 160°C, 350°F, Gas 4

A super cake, works as a plain cut and come again sponge or dressed up for a birthday.
