Gluten Free Yellow Gram Soup

Serves 4

This easy to make, hearty, vegan soup has a rich golden colour. For a comforting midweek supper serve it with a slice of easy gluten free seeded bread or gluten free white bread rolls. Any leftover soup can be frozen for another day.

Ingredients

Change Quantities:
  • 1 tbsp oil
  • 1 onion
  • 2 celery sticks
  • 1 carrot
  • 2 garlic cloves
  • 100g FREEE Gram Flour
  • 1.5l water
  • salt and pepper
  1. Put the oil into a large saucepan over a medium heat.
  2. Finely dice the onion, celery, carrot and garlic, add them to the pan, cover and cook gently for 10 minutes until the vegetables collapse without browning.
  3. Remove the pan from the heat.
  4. Put the gram flour and water into a large bowl or jug, stir to combine then pour into the saucepan.
  5. Return the pan to a medium heat and simmer gently.
  6. Stir over gentle heat as the soup thickens and cooks.
  7. Using a stick or kitchen blender pulse the soup into a puree.
  8. Season with salt and pepper to taste.
