White Chocolate, Cranberry and Maize Slices

Makes 9 squares or 18 triangles

Change Quantities:
  1. Line a 20cm/8” square baking tray with parchment and pre-heat the oven.
  2. Put the flour and baking powder into a bowl and stir to combine.
  3. Melt the butter then tip it into a large mixing bowl.
  4. Add the sugar to the bowl and beat well.
  5. Grate the orange rind into the bowl, add the orange juice and beat again.
  6. Beat in the eggs.
  7. Stir in the prepared flour blend.
  8. Break the chocolate into cubes, add this to the bowl with the cranberries and stir to combine.
  9. Tip the mixture into the prepared baking tray.
  10. Bake for 30-35 minutes.
  11. Cool in the tray before cutting into slices.
  12. Sieve the icing sugar over the slices.
