Volcano Spaghetti

Our recipe

Named after the lava-like melted mozzarella, this tomato based pasta dish makes a perfect family lunch or supper. This quantity serves 4-6 people. Simply halve the recipe if cooking for a couple or smaller group.


Unit of measurement


500 gBrown Rice Spaghetti OR
500 gMaize & Rice Spaghetti
2 tbspsOlive Oil
1 Red Chilli Pepper
2 Cloves of Garlic
2 Tin of Tomatoes
2 tspsBasil
100 gParmesan Cheese
200 gMozzarella Cheese
1 Pinch of Salt
1 Pinch of Pepper


1. Put the oil in a saucepan on a medium heat.

2. De-seed and chop the chilli and garlic and add them to the pan.

3. Add the tomatoes and basil.

4. Squash the tomatoes as the cook. Simmer for 20 minutes.

5. Great the parmesan and set aside.

6. Cut the mozzarella into cubes and set aside.

7. Put the spaghetti into a large pan of water to boil. Cook for 6 - 8 minutes.

8. Drain the pasta and add to the tomato sauce. Mix in well.

9. Season with salt and pepper to taste.

10. Stir in the chopped mozzarella.

11. Serve immediately, topped with the parmesan cheese.

20 minutes on a medium heat
