Vegan Easter Nests

Makes 8 Easter nests

Why not make your own vegan Easter treats such as these Vegan Easter Nests? This is an easy to use recipe and no baking is required.  We dusted our eggs with edible gold and silver sugar but rolling the eggs in toasted coconut is also delicious.

Ingredients

Change Quantities:
  • VEGAN CHOCOLATE EGGS
  • 25g plain chocolate
  • 25g smooth peanut butter
  • ¼ tsp vanilla extract
  • 1 tbsp golden syrup
  • CHOCOLATE NESTS
  • 50g plain chocolate
  • 25g coconut oil
  • 1 tbsp golden syrup
  • 50g FREEE Cornflakes

Vegan Eggs

  1. Break the chocolate into a bowl and melt gently.
  2. Stir the melted chocolate. add the peanut butter, vanilla, and syrup and mix everything together.
  3. Divide the mixture into 30 small piles on a sheet of parchment
  4. Stand until firm enough to roll each pile into a small ball then form it into a small egg shape.
  5. Roll or brush your chosen decoration onto the outside of the small eggs.

Choose one of these egg decoration options

  • edible gold & silver dust
  • desiccated coconut, lightly toasted

Chocolate Nests

  1. Stand the cupcake cases in the holes of a tart tray.
  2. Gently melt the plain chocolate and coconut oil in a large bowl until just runny.
  3. Add the golden syrup and stir to combine.
  4. Add the corn flakes and stir until they are evenly covered in the chocolate.
  5. Working quickly, divide the mixture between the prepared cake cases to make the nests.
  6. Divide any syrup left in the bowl between the nests.
  7. Place three or four of the prepared small eggs in each nest.
