Gluten Free and Vegan Apple Ring Fritters

Makes 8-10 apple ring fritters

These fruity apple ring fritters have a light crunchy batter and make a magnificent breakfast or tea time treat when lightly dusted in a little icing sugar. CAUTION: this recipe uses hot oil for frying which can be dangerous so please do not leave unattended.

Ingredients

Chickpea Flour Batter

  1. Measure the chickpea flour and bicarbonate of soda into a bowl, stir to combine and sieve this into a large mixing bowl.
  2. Add the water and stir to bring together into a smooth thick paste.

Apple Ring Fritters

  1. Line a baking tray with a few pieces of kitchen paper and set aside.
  2. Peel and core the apples.
  3. Cut the apples into 5cm/¼” thick rings.
  4. Put some oil in a frying pan over a medium heat.
  5. Dip an apple ring in the batter, shake off any excess batter and slowly slide it into the hot pan.
  6. Cook over a medium heat until the base is golden, about 3-6 minutes depending on the heat.
  7. Turn the fritters over and cook on the other side, another 3-6 minutes.
  8. OR cook batter coated apple rings in a deep fat fryer according to the manufacturer’s instructions.
  9. Carefully remove cooked apple ring fritters to the paper lined tray, cover and keep warm.
  10. Repeat with the remaining apple rings.
  11. Sieve a little icing sugar over the warm fritters and serve.
