Sugar Free Banana Cake


  • 400g peeled bananas
  • 3 eggs
  • 125g coconut oil
  • 250g Doves Farm Organic Self Raising Wholemeal Flour
  • 25g cocoa nibs (optional)


  1. Line a 1kg/2lb loaf tin with parchment.
  2. Put the banana into a bowl or blender and mash to purée.
  3. Beat in the eggs one at a time.
  4. Add the oil and beat together.
  5. Sieve the flour into the bowl and stir to combine.
  6. Tip the mixture into the prepared tin and smooth the top.
  7. Scatter the cocoa nibs over the top.
  8. Bake for 65-70 minutes, until the sponge springs back when touched.
  9. Leave the cake to cool in the tin for an hour before transferring to a wire rack.
