Sugar Free Banana and Carrot Cake


  • 100g carrot, grated
  • 1 ripe banana
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 egg
  • 75g unsalted butter, melted
  • 175g Doves Farm Self Raising Wholemeal Flour


  1. Line a 2lb/1kg loaf tin or 20cm/8” deep round tin with parchment and preheat the oven.
  2. Finely grate the carrot into a mixing bowl.
  3. Add the banana, vanilla and cinnamon and mash everything together.
  4. Break the egg into the bowl and beat until combined.
  5. Add the melted butter and mix well.
  6. Add the flour and cinnamon and beat together well.
  7. Pour into the prepared tin and smooth the top.
  8. Bake for 40 - 45 minutes.
