Gluten Free Stilton Croquettes


  • 50g butter
  • 150ml milk
  • 75g FREEE Rice Flour
  • 100g stilton cheese
  • 2 tbsp parsley, finely chopped
  • salt and pepper
  • oil for frying


  1. Put the butter, milk and rice flour into a saucepan over very gentle heat.
  2. Stir regularly and beat as the sauce starts to thicken.
  3. Continue stirring as the thick sauce starts to become a soft dough.
  4. Remove from the heat and stir in the parsley, season with salt and pepper.
  5. Cover and leave to cool in the pan.
  6. When cold, crumble the stilton into the soft dough and mix well.
  7. Divide the mixture into eight pieces and shape into croquette ovals.
  8. Heat some oil in a frying pan over medium heat and carefully cook the croquettes, a few at a time, until golden brown on all sides.
  9. Transfer the croquettes to a dish, cover to keep warm, and continue to cook the remaining croquettes.
