Stilton Croquettes

Makes 8

These tasty croquettes are crispy on the outside and soft in the centre. Similar to the vegetarian Glamorgan sausage, stilton cheese adds a lovely depth of flavor  but you could use traditional Caerphilly, or goats cheese.
