Spelt Pecan Cookies


  • 75g butter
  • 75g caster sugar
  • 115g Doves Farm Organic White Spelt Flour
  • ¼ tsp Freee Bicarbonate of Soda
  • 12 pecan nuts


  1. Line a baking tray with parchment and pre-heat the oven.
  2. Sieve in the flour and bicarbonate of soda into a bowl and stir to combine.
  3. Put the butter and sugar into another bowl and beat together until light and fluffy.
  4. Mix in the prepared flour to make a soft dough.
  5. Take teaspoons of dough rolling each into a ball.
  6. Place the dough balls on the prepared baking tray and press a pecan nut into the top of each.
  7. Bake for 12-15 minutes until golden.
