Ragi Roti Vegetable Fritters

Delicious served as an appetizer with chutney or as an accompaniment to curry. You could vary the vegetable and use grated coconut to lighten the chilli.

Vegetarian, Vegan, Without crystal sugar

Ingredients

Change Quantities:
  • 1 spring onion
  • 1/2 carrot
  • 1 red chilli
  • 1 tbsp fresh coriander
  • 2 tbsp yoghurt (or vegan youghurt)
  • a pinch of palm sugar
  • a pinch of salt
  • 50g Doves Farm Organic Millet Flour
  • oil
  1. Finely dice the onion, carrot, chilli and coriander into a mixing bowl.
  2. Add the yogurt, sugar and salt and stir to combine.
  3. Stir in the flour mixing until everything is well combined into a soft dough.
  4. Cover and set aside for 20-30 minutes.
  5. Divide the dough into 6 balls and flatten each into a 8cm/3” fritter.
  6. Heat some oil in a frying pan over medium heat
  7. Carefully slide each fritter into the pan and cook for 7-8 minutes. When the base is golden brown turn the fritter over and cook the other side.
  8. Transfer the fritter(s) to a dish, cover to keep warm, and continue to cook the remaining fritters.
