Ragi Roti Vegetable Fritters

Makes 4 fritters

Delicious served with sweet chilli sauce for light lunch or supper.  Smaller fritters can be served as an appetizer with chutney or as an accompaniment to curry. You could vary the vegetable and use grated coconut to lighten the chilli.

Change Quantities:
  1. Coarsely grate the carrot into a mixing bowl.
  2. Finely slice the onion, dice the chilli and chop the coriander into the bowl.
  3. Add the yoghurt and salt and stir to combine.
  4. Stir in the flour, mixing until everything is well combined into a soft dough.
  5. Divide the dough into 4 pieces and roll each into a ball.
  6. Dust with a little flour and flatten each ball to a 10cm/4” circle.
  7. Cover and set aside for 20-30 minutes.
  8. Heat some oil in a frying pan over medium heat
  9. Carefully slide each fritter into the pan and cook for 7-8 minutes.
  10. When the base is golden brown turn the fritter over and cook the other side.
  11. Transfer the fritter(s) to a dish, cover to keep warm, and continue to cook the remaining fritters.
