Gluten Free Quinoa, Cheese and Tomato Pizza

Ingredients

  • PIZZA BASE
  • 75g FREEE Quinoa Flour
  • ¼ tsp Doves Farm Quick Yeast
  • a pinch of sugar
  • a pinch of salt
  • 75ml tepid water
  • 2 tbsp oil
  • TOPPING
  • 3 tbsp tomato purée
  • 2 tbsp water
  • 2 tomato
  • 50g cheese
  • 1 tbsp chopped herbs
  • salt and pepper

Method

  1. Put the flour, yeast, sugar and salt into a bowl and blend them together.
  2. Add the water and oil stirring to a smooth thick paste.
  3. Line a baking tray with parchment and pre-heat the oven.
  4. Spread the paste into a 23cm/9” circle on the parchment and leave it in a warm place for 40 minutes.
  5. Bake for 25 minutes.
  6. Remove the base from the oven and increase the temperature to 180°C, Fan 160°C, 350°F, Gas 4.
  7. Mix together the purée and water and spread it over the pizza base.
  8. Slice the tomatoes, grate the cheese and scatter these over the purée. Sprinkle with herbs, salt and pepper.
  9. Bake for a further 20-25 minutes.
