Quick Gluten Free Fairy Cakes


  • 150g butter
  • 150g caster sugar
  • 3 eggs
  • 150g FREEE Self Raising Flour
  • 5 tbsp milk
  • ½ tsp vanilla extract


  1. Stand the cake cases in the holes of the tart trays and pre-heat the oven.
  2. Put the butter and sugar into a mixing bowl and beat together until light and fluffy.
  3. Beat in the eggs one at a time, ensuring each is well incorporated before adding the next.
  4. Sieve the flour into the bowl then stir it into the mixture.
  5. Add the milk and vanilla and combine them well.
  6. Half fill the prepared paper cases.
  7. Bake in the pre-heated oven for 18-20 minutes, until the sponge springs back when touched.
  8. Cool the cakes on a wire rack.
