KAMUT® Pitta Flatbreads


  • 150g natural yogurt
  • 250ml tepid water
  • 500g Doves Farm Organic Kamut Khorasan Wholemeal Flour
  • 1 tsp Doves Farm Quick Yeast
  • 1 tsp salt
  • flour for dusting


  1. Measure the yogurt and water into a jug and stir to combine.
  2. Put the flour, yeast and salt into a large bowl and blend them together.
  3. Stir in the yogurt mixture into the bowl and mix well.
  4. Using your hands gather everything together into a doughy mass.
  5. Knead dough in the bowl, or on a work surface, for 100 presses.
  6. Cover the dough with oiled cling film and leave it to rise for 4–6 hours.
  7. Pre-heat the oven and put the baking tray into it to heat up.
  8. Knead the dough for another 100 presses then cut it into twelve equal pieces and roll each into a ball.
  9. Using floured hands, flatten each piece of dough and gently tease it into a 10x20cm/4x8" oval.
  10. Working quickly and carefully, open the oven and lay two or three pitta on the hot baking sheet. Bake for 6-8 minutes.
  11. Remove the pitta and wrap in a clean towel to cool.
