Easy Gluten Free Pesto and Feta Thin and Crispy Pizza

Makes 1x30cm/12” pizza

Use FREEE Pizza mix to make great thin and crispy gluten free pizza bases. Pesto & Feta cheese makes a quick and easy topping. Alternatively you could top a pre-baked pizza base with tomato and mozzarella, spinach and blue cheese, or tapenade topped with a sliced courgette.

Ingredients

Change Quantities:
  • THIN AND CRISPY PIZZA BASE
  • 175g FREEE Pizza Base Mix
  • 175ml tepid water
  • 1 ½ tbsp oil
  • oil, for tray
  • TOPPING
  • 150g pesto sauce
  • 100g feta, crumbled

Thin & Crispy Pizza Base

  1. Pre-heat the oven.
  2. Rub some oil around the inside of a 28x30cm baking tray and.
  3. Weigh the pizza mix into a large bowl, add the water and oil and stir to make a thick paste.
  4. Tip the paste onto the prepared tray and spread it into a 30cm/12” circle with a spatula.
  5. Leave in a warm place for 30 minutes.
  6. Using a fork, prick all over the pizza base.
  7. Pre-bake for 20 minutes.

Pesto and Feta Topping

  1. Remove the pizza base from the oven and cover it with sauce.
  2. Scatter crumbled feta over the top
  3. Bake for a further 12 minutes.
