Gluten Free Penne Mac 'n' Cheese


  • 25g butter (or vegan butter)
  • 100g FREEE Plain White Flour
  • 600ml milk (or vegan milk)
  • 250g cheese (or vegan cheese)
  • pinch salt and pepper
  • 250g FREEE Brown Rice Penne
  • 5 tomatoes


  1. Put the butter, flour and milk into a saucepan and stir over a gentle heat until thickened.
  2. Stir the cheese into the sauce, season with salt and pepper.
  3. Bring a large pan of salted water to a rapid boil and cook the pasta as per instructions on the back of the packet.
  4. Drain the pasta and stir it into the cheese sauce, then tip into an oven proof dish.
  5. Slice or halve the tomatoes and place them on top.
  6. Bake in a pre-heated oven for 25-30 minutes, until the top is golden brown.
