Pecan and Maple Spelt Muffins


  • 150g Doves Farm Organic White Spelt Flour
  • 2 tsp FREEE Baking Powder
  • 1 egg
  • 75ml maple syrup
  • 50ml oil
  • 1 tbsp water
  • 100g pecan halves


  1. Stand the muffin cases in the holes of a muffin or tart tray and pre-heat the oven.
  2. Sieve the flour and baking powder into a bowl and stir to combine.
  3. Weigh out the pecans, remove 6 halves for later and roughly crush the rest.
  4. Add the crushed pecans to the bowl and mix well.
  5. Break the egg into a jug, add the syrup, oil and water and beat together well.
  6. Pour the mixture into the flour bowl, and mix everything together well.
  7. Spoon the mixture into the muffin cases.
  8. Place a reserved pecan on top of each muffin.
  9. Bake for 25 minutes.
