Gluten Free Peanut Butter Cookies


  • 175g FREEE Rice Flour
  • 1 tsp FREEE Baking Powder
  • 125g butter
  • 175g soft brown sugar
  • 1 egg
  • 125g peanut butter


  1. Line a baking tray with parchment and pre-heat the oven.
  2. Sieve the flour and baking powder into a bowl and stir to combine.
  3. Put the butter and sugar into another bowl and beat them together until light and fluffy.
  4. Beat in the egg and peanut butter.
  5. Mix in the prepared flour.
  6. Take teaspoons of dough rolling each into a ball.
  7. Place the dough balls on the prepared baking tray and flatten the dough slightly with the back of a fork.
  8. Bake for 15–20 minutes until golden.
