Gluten Free Vegan Rice Flour Drop Scones

Makes 8-9 drop scones

These simple, rice flour, vegan drop scones are best served warm or toasted with any syrup, jam or fruit compôte.

Ingredients

Change Quantities:
  1. Put the flour, baking powder, xanthan gum and salt into a large mixing bowl or jug and stir to combine.
  2. Add half the water and beat to make a smooth batter.
  3. Beat in the remaining water.
  4. Put a little oil into a frying pan, roll it around to cover the surface and heat until nice and hot.
  5. Pour batter into the pan to make 7.5cm/3” circles and cook on a medium heat.
  6. When bubbles appear on the surface and the base is lightly golden turn the pancakes over and cook the other side.
  7. Transfer cooked drop scones to a plate.
  8. Repeat until the batter is used.
  9. Serve warm or toasted with syrup.
