Line an oven dish with two sheets of kitchen paper.
Put the gram flour, cumin seeds, coriander, turmeric, salt and mixed spice into a large mixing bowl and stir to combine.
Add the water and whisk to make a paste.
Finely grate the potato into the bowl and stir to combine
Finely grate the onion, breaking it into individual pieces as it goes into the bowl.
Stir thoroughly.
Put the oil into a frying pan over medium heat.
Take a rounded spoon of the mixture and carefully slide it into the hot pan.
Cook the bhaji, turning it regularly, until golden brown on all sides.
OR cook bhaji’s in a deep fat fryer according to the manufacturer’s instructions.
Using a slotted spoon, lift the bhaji onto the prepared oven dish and cover to keep warm.
Repeat the cooking process with the remaining bhaji mixture.

Gorgeous recipe - the nicest bhajis any of us have ever tasted and so simple to make. I made a couple of small changes - also added 1/4 teaspoon mild chilli powder and chopped the onion very fine rather than grate having once had an unfortunate experience with grated onion! I also found it needed a drop more water than the 4 tbspn. Congratulations - an absolute winner
