Gluten Free Vegan Mushroom Burgers

Makes 4 burgers

These vegan burgers can be prepared in advance and chilled or frozen. You will need some Gluten Free Homemade Breadcrumbs, which are super easy to make, and you could rustle up some Gluten Free BBQ Sauce to compliment this tasty lunch or supper dish.

Ingredients

Change Quantities:
  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 3 garlic cloves, finely diced
  • 300g mushrooms, finely diced
  • 125g gluten free homemade breadcrumbs
  • ¼ tsp thyme
  • ¼ tsp salt
  • ¼ tsp pepper
  • oil, for frying
  • wedges of lemon, optional
  • chopped parsley, optional

Mushroom Burgers

  1. Put the olive oil into a large frying pan over a gentle heat.
  2. Peel and finely dice the onion into the pan and cook on a medium heat until the onion becomes translucent.
  3. Finely dice the garlic cloves and add them to the pan.
  4. Cut the mushrooms into fine dice, add these to the pan and cook on a medium heat until the mushrooms start to collapse.
  5. Tip everything into a mixing bowl.
  6. Add the breadcrumbs, thyme, salt and pepper and blend everything together well.
  7. Divide the mixture into four mounds and using your hands form each mound into a 75mm/3” burger.
  8. Chill the mushroom burgers for at least an hour or until you are ready to cook them.
  9. Heat some oil in a large frying pan.
  10. Carefully slide the mushroom burgers into the pan and cook until the base is crisp and brown.
  11. Turn the mushroom burgers over and cook the other side.
  12. Serve warm with wedges of lemon and sprinkled with parsley.
