Mushroom Burgers

These vegan burgers can be prepared in advance and served simply on a plate or in a bun. BBQ sauce will compliment this tasty supper dish.

Ingredients

Change Quantities:
  • 125g fresh bread crumbs (check allergen status)
  • 25g olive oil
  • 1 onion
  • 3 garlic cloves
  • 300g mushrooms
  • salt and pepper
  • oil

Dry Breadcrumbs

  1. Pre-heat the oven.
  2. Remove the crusts from the bread and chop it into chunks.
  3. Using your fingers break the chunks into crumbs or put the bread into a food processor or blender and pulse until an even crumb size is reached.
  4. Spread the fresh breadcrumbs out thinly on the prepared baking tray.
  5. Bake for 6 – 8 minutes until golden.
  6. When completely cold crush the crumbs into fine pieces by rolling them with a rolling pin or using a kitchen blender and put them into a shallow bowl.

Mushroom Burgers

  1. Put the oil into a large frying pan over a gentle heat.
  2. Peel and finely dice the onion into the pan and cook on a medium heat until the onion becomes translucent.
  3. Finely dice the garlic cloves and add them to the pan.
  4. Mince the mushrooms, add these to the pan and cook on a medium heat until the mushrooms start to collapse.
  5. Tip the mushrooms into a mixing bowl.
  6. Add the breadcrumbs, salt and pepper and blend everything together well.
  7. Divide the mixture into four mounds and using your hands form each mound into a 65mm/3” burger.
  8. Chill the mushroom burgers for at least an hour or until you are ready to cook them.
  9. Heat some oil in a large frying pan, carefully add the mushroom burgers and cook until their bases are browned.
  10. Turn the mushroom burgers over and cook the other side.
