Mixed Seed and Nut Wholemeal Loaf

Create your own blend of seeds or nuts for this loaf which will have its own distinctive character.

Ingredients

  • 500g Doves Farm Organic Strong Wholemeal Bread Flour
  • 1 tsp Doves Farm Quick Yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 350ml tepid water
  • 1 tbsp oil
  • 150g sunflower, sesame, poppy or pumpkin seeds or any kind of nuts

Method

  1. Put the flour, yeast, sugar and salt into a bowl and blend them together.
  2. Stir the water into the bowl and when everything looks craggy and lumpy, mix in the oil.
  3. Use your hands to gather everything together into a ball of dough.
  4. Knead the dough for 100 presses, in the bowl or on a work surface.
  5. Cover the dough bowl with oiled cling film and leave it in a warm place for the dough to double in size, which will take about an hour.
  6. Knead the dough for another 100 presses then incorporate the seeds and nuts until well combined.
  7. Shape the dough and put it into your prepared tin.
  8. Loosely cover the tin with the oiled cling film and leave it to rise in a warm place for 40 minutes.
  9. Pre-heat the oven.
  10. Bake for 40-45 minutes. You will know it’s done when the bottom sounds hollow when tapped. Leave to cook on a wire rack.
