Millet Melting Moments

Makes 12 biscuits

Although sandwich biscuits might be a touch old-fashioned, these tempting vanilla treats are leading a snack time revival.

Ingredients

Change Quantities:

Biscuits

  1. Line a large oven tray with parchment and pre-heat the oven.
  2. Put the flour into a bowl, add the baking powder and stir to combine.
  3. Put the butter and sugar into another bowl and beat together until light and fluffy.
  4. Beat in the vanilla.
  5. Sieve the flour blend into the bowl and mix into a stiff dough.
  6. Take small spoons of the mixture and roll into balls the size of a grape.
  7. Put the dough balls onto the prepared baking tray and flatten slightly with the back of a fork.
  8. Bake for 20-22 minutes, until light gold in colour.
  9. Leave to cool on the oven tray.

Buttercream

  1. Sieve the icing sugar into a bowl.
  2. Add the butter and mix into a soft, smooth paste.
  3. Spread, or pipe the buttercream onto half of the cold biscuits.
  4. Top with the remaining biscuits to create sandwich biscuits.
