Maize Flatbread Wraps

Makes 6 flatbreads

Maize flatbreads, such as this Johnny Cake or Journey Cake, have been made in maize growing areas around the world for centuries. At Doves Farm we have been making these simple maize pancakes since the mid 70’s.

Free from Gluten, Egg, Soya, Wheat, Dairy, Nuts
Vegetarian, Vegan, Without crystal sugar


Change Quantities:
  1. Put the flour, salt, water and oil into a jug and stir to make a batter.
  2. Leave the mixture to stand for 5 - 10 minutes.
  3. Heat a little oil in a frying pan until it is nice and hot.
  4. Stir the batter then pour some into the pan smoothing it out to form a circle 10cm/4” in diameter.
  5. Cook over a medium heat until bubbles start to appear on the surface and the base is lightly golden.
  6. Turn the flatbread over and cook the other side until that side is lightly golden.
  7. Remove the flatbreads to a plate to cool.
  8. Wrap the flatbread in foil to stop them drying out.
  9. Serve warm or cold. Best eaten on the day of making.
