• 160g Doves Farm Organic Pasta Flour
  • 2 eggs
  • flour for dusting
  • 400g minced meat (or mixed vegetables, chopped)
  • 1 garlic clove
  • 400g tomatoes, chopped
  • 3 tbsp tomato puree
  • 1 tbsp mixed herbs
  • pinch of sugar
  • oil of frying
  • salt and pepper
  • 500ml milk
  • 50g butter
  • 50g Doves Farm Plain White Flour
  • 75g cheese, grated


Pasta sheets

  1. Put the flour and egg into a bowl and mix into a dough.
  2. Knead well for 2 minutes then cover and leave for 15 minutes.
  3. Cut the dough into golf ball sized pieces and dust lightly with flour.
  4. Dust the pasta machine with flour and pass each dough piece through the widest, flat roller. Fold it in half and pass it through again. Repeat this step twice more.
  5. Dust the dough sheet with flour and set aside.
  6. Process the remaining dough balls in the same way.
  7. Decrease the roller width a little and pass each sheet through that a couple of times.
  8. Reduce the roller width further and pass the dough through again.
  9. Cut the pasta into rectangles, dust with flour to prevent stickiness and spread out to dry until required.

Tomato sauce

  1. Heat the oil in a frying pan, add the meat (or mixed chopped vegetables) and cook for five minutes, stirring occasionally.
  2. Chop the garlic and tomatoes, and add these to the pan over a medium heat.
  3. Stir in the purée, herbs and sugar, season with salt and pepper.
  4. Cook gently for a few minutes then set aside.

Cheese sauce

  1. Put the milk, butter and flour in a saucepan over a gentle heat and stir until thickened.
  2. Stir in the cheese and season with salt and pepper.


  1. Rub a little oil over the inside of a large deep baking dish and pre-heat the oven.
  2. Put a spoon of prepared tomato sauce into the bottom and spread it out.
  3. Cover the sauce with a layer of pasta sheets.
  4. Spoon cheese sauce over the pasta followed by some more tomato sauce.
  5. Repeat the layering process; pasta sheets, tomato sauce, cheese sauce, ending with the cheesey layer.
  6. Bake for 50-60 minutes.
