Sauces made with Tapioca Flour typically have a smooth, glossy and translucent appearance and also freezes well.

Tapioca Flour is a useful starchy flour made from the tubers of the manioc plant, also known as cassava or yuka.

Sauces can also be made with Cornflour, Potato Flour and Xanthan Gum.

How to Thicken Stews and Gravies with Tapioca Flour

  1. Mix 2-3 teaspoons of tapioca flour with 2-3 tablespoons of cold milk or water to make a paste.
  2. Remove the hot item from the heat source.
  3. Stir about a cup of warm liquid into the tapioca flour paste.
  4. Immediately pour everything into the hot item stirring well.
  5. Return the hot item to the heat, allow to boil and stir as it thickens.

How to Make Sauces using Tapioca Flour such as Vegan Gravy

  1. Mix 3-4 teaspoons of the flour with 3-4 tablespoons of cold liquid taken from a total quantity of 500/600ml.
  2. Bring the liquid to the boil.
  3. Remove from the heat.
  4. Stir in the tapioca paste.
  5. Return to the heat and stir.
  6. Boil and stir as it thickens.

How to Use Tapioca Flour in Baking

  1. Can be used to soften strong flour for cake baking.
