Baking Powder is used to raise many baked items, through an acid and alkali reaction that takes place when it is combined with liquid and heat, generating air bubbles and lift during baking.
The active ingredients in FREEE Baking Powder are mono calcium phosphate which is acidic and sodium bicarbonate which is alkaline. When too much baking powder is used baked goods can taste soapy.
