Gluten Free Rice Soda Bread

Makes 1 loaf

A delicious gluten free Rice Soda Bread made using our FREEE Rice Flour.  This has a close crumb texture and also yeast free.

Free from Gluten, Egg, Soya, Wheat, Nuts


Change Quantities:
  1. Rub some oil around a 1kg/2lb loaf tin or line it with parchment.
  2. Weigh the flour into a large mixing bowl.
  3. Sieve the bicarbonate of soda, xanthan, sugar, salt and vitamin C (if using lemon juice add it at the next step) into the bowl and stir to combine
  4. Put the yogurt, water (and lemon juice if used) and two spoons of the oil into another bowl and stir to mix.
  5. Cover the bowls and leave them in a warm place for 30 minutes and pre-heat the oven.
  6. Stir the yogurt mix into the flour to form a soft dough.
  7. Drizzle the last spoon of oil over the dough. Tip the bowl back and forth or side to side moving the dough so that it becomes lightly covered in oil and loosens from the bowl.
  8. Tip the dough into the prepared tin and smooth the top.
  9. Put the bread into the hot oven, close the door immediately then reduce the temperature to the lower heat at 200°C, Fan 180°C, 400°F, Gas 6.
  10. Bake for 55 - 60 minutes.
  11. Turn the loaf out onto a wire rack. The bottom should sound hollow when tapped.
  12. Cool completely before slicing.

Lower to 200°C, Fan 180°C, 400°F, Gas 6
