Gluten Free Red Lentil and Smoked Mackerel Pasta

Serve this pasta recipe warm or chilled for a protein-packed pasta lunch or supper.

Free from Gluten, Soya, Wheat, Nuts
Without crystal sugar

Ingredients

Change Quantities:
  • 100g cucumber, grated
  • 50g frozen peas
  • 1 egg
  • 125g smoked mackerel
  • 1 tbsp lemon juice
  • 3 tbsp olive oil
  • 125g FREEE Red Lentil Penne
  • salt and pepper
  1. Grate the cucumber into a sieve and set aside.
  2. Pour boiling water onto the peas.
  3. Hard boil the egg.
  4. Break the fish into chunks and discard the skin.
  5. Mix together the oil and lemon juice.
  6. Bring a large pan of salted water to a rapid boil, add the pasta and cook for about 7 minutes. The pasta is cooked when it is still a little firm but can be cut easily with the side of a fork.
  7. Drain the pasta and put it into a serving dish.
  8. Pour on the prepared oil, season with salt and pepper and stir to mix.
  9. Press the cucumber to drain off any liquid then add it to the dish.
  10. Drain and add the peas.
  11. Add the prepared mackerel and stir to combine.
  12. Shell the hard-boiled egg, cut it into quarters and place these on top.
  13. Serve warm or cold.
