Gluten Free Pea Penne and Avocado Salad

As seen at The Allergy and Free From Show in Liverpool 2017 - this delicious gluten-free pasta dish using our new green pea penne is perfect comfort food and ideal evening treat.

Vegetarian, Without crystal sugar

Ingredients

Change Quantities:
  • 35g fresh spinach
  • 200ml boiling water
  • 12g shallot
  • 175g ripe avocado
  • 2 ½ tbsp lime juice
  • 1 tbsp olive oil
  • ½ tsp salt
  • black pepper, pinch
  • 125g FREEE Green Pea Penne
  • 50g peas
  • salt and pepper
  1. Put the spinach into a bowl, add the boiling water, leave to stand for 30 seconds then drain and leave to cool.
  2. Squeeze any excess water from the spinach and put it into a kitchen blender.
  3. Peel and roughly chop the shallot and add this to the blender.
  4. Add the lime juice, oil, salt and pepper then blend to make a sauce.
  5. Fill a large pan with boiling water, add salt and bring to a rapid boil.
  6. Add the pasta and cook for 6 minutes.
  7. Add the peas, bring the water back to the boil and cook for a further 2 minutes.
  8. Drain the pasta then tip it into a bowl of cold water then drain it again.
  9. Tip the pasta into a bowl and pour the prepared sauce over the pasta.
  10. Peel and dice the avocado, add it to bowl and stir to combine.
  11. Taste and season with salt and pepper if required then chill until required.
