Easy Gluten Free Mini Choc Chip and Cherry Cookies

Makes 60 mini cookies

Use FREEE Choc Chip Cookie Mix to make these great little cookie biscuits, ideal for serving with a cup of coffee or nibbling anytime. They would also make a great addition to your party repertoire, served simply on a plate or sitting in mini paper cupcake cases. Change Quantities:
  1. Pre-heat the oven.
  2. Rub some oil around the inside of two baking trays.
  3. Empty the choc chip cookie mix into a large mixing bowl.
  4. Add the water and stir to make a lumpy mix.
  5. Stir in the oil.
  6. Take grape sized pieces of dough, approximately 6g each, and roll them into balls.
  7. Transfer the dough balls to the baking trays, spacing them out.
  8. Cut the cherries in half and press a piece of cherry onto each ball of dough.
  9. Bake for 10-12 minutes.
  10. When cold store in a tin.

200°C, Fan 180°C, 400°F, Gas 6
