Gluten Free Crumpets


  • 200g Freee White Bread Flour
  • 1 tsp Doves Farm Quick Yeast
  • ¼ tsp Freee Xanthan Gum
  • ¼ tsp Freee Bicarbonate of Soda
  • ¼ tsp salt
  • ¼ tsp sugar
  • 500ml tepid milk
  • oil for frying


  1. Put the flour, quick yeast, xanthan, bicarbonate of soda, salt and sugar into a large bowl and stir to combine.
  2. Add the milk and stir to make a thick batter.
  3. Cover and leave the batter to stand in a warm place for at least 2 hours or up to 12 hours.
  4. Rub a little some oil around the crumpet rings and put a little more oil into a frying pan, rolling it around to cover the surface. Stand the crumpet rings in the pan and heat until nice and hot.
  5. Put a large spoon of the mixture into each crumpet ring.
  6. Cook on gentle heat for about 10 minutes while air holes open up on the crumpets and the base is golden brown.
  7. Remove the metal ring from the crumpet.
  8. Turn the crumpet over and cook for one minute.
