Gluten free Chocolate chip & banana muffins

Moist Gluten Free Chocolate Chip and banana muffins - easy to make and great for cooking with kids.

Ingredients

150g/6oz Softened butter
150g/6oz Caster Sugar
1 tsp Vanilla Extract
2 Eggs
1 Banana
2 tbsp cocoa powder
1 tsp bicarbonate of Soda
150g/6oz Gluten free plain white flour
6 tbsp milk
1 handfull of chocolate chips

Method

  1. Cream the butter, sugar and vanilla together with a wooden spoon.
  2. Slowly mix in the eggs
  3. Mash the banana and add to the mixture
  4. Mix in the flour, cocoa powder, bicarb of soda and milk. Now add the chocolate chips. The mixture should be quite loose.
  5. Divide between muffin cases or greased muffin tin (two generous tsp fulls in each)
  6. Bake in a pre heated oven for 15 to 20 minutes. You can test with a coctail stick if it comes out without loads of uncooked mixture on it the muffins are ready.

Temperature & cooking time:
Oven 190c/Fan 170c/375f/Gas 5 for 15 to 20 minutes

I'm not a fan of banana in anything baked but needed to use up some over-ripe ones.....and WOW these are amazing! Can't believe how light and fluffy they came out! I've made them twice now and they both came out amazingly light. First time I followed the recipe exactly (but used vegan milk and marg.), second time I used 1.5 bananas, and didn't have any margarine so used half a cup of olive oil instead. Also, used Doves Farm GF Bread flour instead of plain (omitting the bicarb.) Oh, and threw some more choc chips on the top before baking. Keeping this one for sure!

One of the best gluten free muffin recipes I've made. Foolproof and easy to switch to nuts instead of chocolate. Easy to make vegan (switch out the butter for spread). In fact these are better than a lot of the gluten muffins I've had!

Really yummy and easy to make. I used 2 bananas instead of one, so the muffins took a bit longer to bake, around 25 mins.

I made these first last week by hand but found it difficult due to disabilities, so they came out flat, but very nice to eat. Today I made them with Doves self raising flour and my new mixer and two bananas, (yes two, crazy I know) and they have risen to perfection, just fantastic, my husband is going to eat them all, I just Know it.

I have just made these but used hazelnuts instead of the banana, they were really easy to make,look great and taste fantastic

Great recipe! I am new to eating gluten free food and I really don't like banana so I tried replacing the banana with 100g of frozen black cherries and it worked so well! Thank you!

Great recipe, thanks you. I didn't have enough castor sugar so used light brown muscovado sugar instead - I also changed the method slightly as I can't cream butter and sugar due to an injury - melt the butter and sugar in a pan, take off the heat and add the mashed banana, beaten eggs and dry ingredients, add milk last - mis all together and fill the muffin cases 2/3 full - absolutely delicious muffins and very little effort or washing up - I will ditch all other banana muffin recipes now :-)

Brilliant recipe, I adapted to use grated apple and mixed fruit instead of banana and chocolate and they were delicious. Lovely moist yet light texture.
