Rub some oil round the inside of two large baking trays or insert a baking liner.
Finely grate the parmesan into a mixing bowl.
Add the tapioca, baking powder, salt, pepper and paprika and stir to combine.
Spoon the water and oil into the bowl and stir to make a paste.
Take a small teaspoon of the paste, roll it into a ball and place on the prepared baking trays.
Bake for 18-20 minutes.
Leave to cool and when quite cold, store in a tin.

Delicious biscuits, lovely texture - crisp on the outside, slightly chewy on the inside. Easy to make too. You would never guess they were gluten free.
