Gluten Free Asparagus Tempura

Serves 2

When asparagus is plentiful, this incredibly light, tempura batter, adds a delicious extra dimension. Serve these battered asparagus with lemon quarters, soya sauce or mayonnaise. CAUTION: this recipe uses hot oil for frying which can be dangerous so please do not leave unattended.

Ingredients

Change Quantities:
  • 200g fresh asparagus spears
  • 1 egg white
  • 1 tbsp FREEE Tapioca Flour
  • pinch of salt and pepper
  • 1 tsp water
  • oil, for frying
  • lemon, for serving
  1. Using a potato peeler, peel the asparagus stalks and trim the cut ends.
  2. Heat some oil in a heavy pan OR prepare a deep fat fryer according to the manufacturer’s instructions.
  3. Put the egg white into a bowl, add the tapioca flour, salt and pepper and beat into a smooth paste.
  4. Dip spears of asparagus into the paste then carefully slide them into the hot oil.
  5. Cook until the asparagus are until golden all over, turning over if necessary (2 - 4 minutes depending on the heat).
  6. Transfer the cooked asparagus to a sheet of kitchen paper to drain.
  7. Keep warm while any remaining asparagus is cooked.
  8. Serve immediately with lemon quarters.

electric beaters, heavy pan or deep fat fryer, kitchen paper and mixing bowl.
