Gluten Free and Vegan Brown Bread in a Bread Machine

Makes 1 loaf

A vegan version of gluten free brown bread for baking in a bread machine. For best results we like to use rice milk, olive oil and brown sugar in this recipe but you can swap these for any vegan milk, oil and sugar all of which vary the loaf slightly.

FREEE Brown Bread Flour 500g 750g
FREEE Chickpea Flour 2 tbsp 3 tbsp
sugar 1 tbsp 1½ tbsp
salt 1 tsp 1½ tsp
vegan milk 550ml 760ml
oil 6 tbsp 9 tbsp 
vinegar 1 tsp 1½ tsp
quick yeast 2 tsp 3 tsp

*Fill your bread pan with water to determine its capacity.


  1. Measure the bread flour, chickpea flour, sugar and salt into a bowl and stir to combine.
  2. Put the vegan milk, oil and vinegar, into another bowl and whisk well.
  3. Pour this into the bread machine pan.
  4. Add the prepared flour blend.
  5. Sprinkle the yeast on top.
  6. Close the lid and turn the machine to the gluten free program. Alternatively use a basic rapid setting with the high bake option.
  7. Select the dark crust option if available on the machine.
  8. Check the pan is locked into position and start the machine.
  9. Remove the bread pan from the machine as soon as it has finished baking.
  10. Tip the bread out of the pan and remove the mixer paddle from the bottom of the loaf.
  11. Cool the bread on a wire rack.
  12. For best results wait until the bread is cold before slicing.
