Ginger Crumbles


  • 25g Doves Farm Organic Stoneground White Rye Flour
  • 2 tsp Freee Baking Powder
  • 2 tsp ginger powder
  • 1 pinch of salt
  • 75g oats
  • 50g brown sugar
  • 100g golden syrup
  • 50g butter
  • 1 lemon, grated rind & juice
  • 25g chopped crystalised ginger


  1. Line a baking tray with parchment and pre-heat the oven.
  2. Sieve the flour, baking powder, ginger powder and salt into a bowl.
  3. Add the oats and sugar, stir to combine.
  4. Put the golden syrup, butter, lemon rind and juice into a saucepan and stir over gentle heat until the butter is melted.
  5. Stir the syrup into the prepared dry ingredients to make a soft dough.
  6. Mix in the crystalised ginger.
  7. Take teaspoons of dough rolling each into a ball.
  8. Place the dough balls on the prepared baking tray and flatten the dough slightly with the back of a fork.
  9. Bake for 20 minutes until golden.
