Fruity Coconut Cakes

These fruity coconut cakes are made without refined sugar, using the fruit and honey as a natural sweetener. Enjoy these guilt free treats in your lunch box or as part of afternoon tea.

Free from Gluten, Soya, Wheat, Dairy, Nuts
Vegetarian, Wholemeal, Without crystal sugar

Ingredients

Change Quantities:
  1. Line a baking tray with parchment and pre-heat the oven.
  2. Put the flour and baking powder into a bowl, stir to combine and set aside.
  3. Put the banana into a mixing bowl or kitchen blender bowl and mash it into a purée.
  4. Grate the orange rind into the bowl and add the orange juice.
  5. Add the oil, honey and egg and beat or blend together well.
  6. Mix in the prepared flour.
  7. Stir in the coconut.
  8. Spoon into 15 piles on the prepared baking tray.
  9. Cut the apple into quarters and remove the core. Cut each quarter into four slices and place a slice on the top of each cake.
  10. Bake for 25-30 minutes.
