Fruity Coconut Cakes

Makes 15

These fruity coconut cakes are made without refined sugar, using the fruit and honey as a natural sweetener. Enjoy these guilt free treats in your lunch box or as part of afternoon tea.

Free from Gluten, Soya, Wheat, Dairy, Nuts
Vegetarian, Wholemeal, Without crystal sugar


Change Quantities:
  1. Line a baking tray with parchment and pre-heat the oven.
  2. Sieve the flour and baking powder into a bowl, stir to combine and set aside.
  3. Put the banana into another bowl and mash it into a purée.
  4. Grate the orange rind into the bowl and add the juice.
  5. Add the oil, honey and egg and beat together well.
  6. Mix in the prepared flour.
  7. Stir in the coconut.
  8. Spoon into 15 piles on the prepared baking tray.
  9. Peel and core the apple, cut it into 15 slices and place a slice on the top of each cake.
  10. Bake for 30-35 minutes.
