Vegan Cauliflower Cheese


  • 1 cauliflower
  • 500ml milk (or vegan milk)
  • 4 tbsp Freee Organic Cornflour
  • 150g grated cheese (or vegan cheese)
  • 1 tsp wholegrain mustard
  • salt and pepper


  1. Chop the cauliflower into florets and cook in boiling water until almost soft.
  2. Put the cornflour and 4-5 spoons of the milk into a bowl, stir it into a paste and set it aside.
  3. Heat the remaining milk in a large pan until almost boiling then remove it from the heat.
  4. Stir the cornflour mixture back to a paste, then stir the paste into the milk.
  5. Return the pan to a gentle heat and stir until the sauce thickens.
  6. Stir in the cheese, mustard, salt and pepper. 
  7. Grease a 1lt/2pt oven-proof dish with oil and pre-heat the grill.
  8. Drain the cauliflower, add it to the sauce and stir.
  9. Tip everything into the prepared dish.
  10. Place the dish under the grill for a few minutes to brown the top.
