Elderflower Fritters

Collect elderflower heads in May and June to make this delicious early summertime pudding.


Unit of measurement


100 gSelf Raising Flour
25 gIcing Sugar
1 Egg
125 mlCider
8 Elderflower Heads
50 gButter
3 tbspsSunflower Oil



  1. Shake the elderflower heads to remove any insects.
  2. Mix together the Self Raising Flour and icing sugar.
  3. Add the egg and cider and beat together well.
  4. Warm half the butter and oil in a large frying pan.
  5. Dip half the elderflower heads in the batter.
  6. Shake off excess batter and put them flower side into the pan.
  7. As the fritters start to cook, snip off any excess stalks with a pair of scissors.                                                                                                              
  8. Cook on medium heat then turn over and cook the stalk side.
  9. When both sides are golden remove and keep warm.
  10. Repeat with remaining butter, oil and elderflower heads.
