Dorset Window Rhubarb Pudding


  • 75g butter
  • 100g sugar
  • 1 egg
  • 100g Doves Farm Organic Self Raising White Flour
  • 3 tbsp milk
  • 400g rhubarb


  1. Rub a little butter around a 18x28cm/7x11” ovenproof dish and pre-heat the oven.
  2. Put the butter and sugar into a mixing bowl and beat until light and fluffy.
  3. Crack the egg into the bowl and beat well.
  4. Add the flour and milk and stir until combined.
  5. Wash, dry and slice the rhubarb into 3xm/1” lengths.
  6. Add the rhubarb to the mixing bowl and stir.
  7. Tip the mixture into the prepared dish and smooth the top.
  8. Bake for 40–45 minutes.
