Gluten Free Crispy Cocoa Rice Squares

A firm family favourite, store these squares in a tin and use for lunch boxes, party teas and anytime treats. This simple recipe is ideal for a cake making session with very young children who will be thrilled to eat their own creation.

Free from Gluten, Peanuts, Soya, Nuts

Ingredients

Change Quantities:
  1. Lightly grease a 18x20cm/6x8” dish and reserve to one side.
  2. Soak the gelatine in a bowl of cold water for 5 minutes.
  3. Gently melt together the butter and golden syrup in a saucepan over a low heat and stir until thoroughly dissolved. Remove from the heat.
  4. Remove the gelatine from the bowl and shake off any excess water.
  5. Add the gelatine to the saucepan and gently stir without heat, until dissolved.
  6. Gently stir in the cocoa rice until mixed.
  7. Allow to cool a little and then stir in the chocolate chips.
  8. Press the mixture into the prepared dish, cool until set and then cut into squares.
