Gluten Free Courgette, Thyme and Parmesan Spaghetti


  • 300g courgettes
  • 2 garlic cloves, finely dinced
  • 1 red chilli (optional)
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp fresh thyme
  • 75g parmesan shavings (or vegan cheese)
  • 300g Freee Brown Rice Spaghetti


  1. Slice the courgettes lengthways, into a large bowl, using a potato peeler.
  2. Finely dice the garlic and chilli and add them to the bowl with the oil, lemon juice, thyme, salt and pepper.Mix well, then set aside to marinate for at least two hours.
  3. Bring a large pan of salted water to a rapid boil and cook the pasta as per instructions on the back of pack.
  4. Drain the pasta and return it to the pan.
  5. Add the marinated courgettes and mix together well.
  6. Serve sprinkled with the parmesan.
