Slice the courgettes lengthways, into a large bowl, using a potato peeler.
Finely dice the garlic and chilli and add them to the bowl with the oil, lemon juice, thyme, salt and pepper.Mix well, then set aside to marinate for at least two hours.
Bring a large pan of salted water to a rapid boil and cook the pasta as per instructions on the back of pack.
Drain the pasta and return it to the pan.
Add the marinated courgettes and mix together well.
Serve sprinkled with the parmesan.
Tonight I made this recipe and didn't even bother with the pasta, I just used the zucchini - zoodles- marinated for it for 2 hours and then just warmed it in the oven. It was delicious.
