Rub some butter around the inside of a 15 x 20cm/6 x 8" baking tray or insert a baking liner.
Gently melt together the chocolate and butter.
In another bowl mix in the sugar, coconut flour and baking powder.
Break the eggs into the dry ingredients, add the vanilla extract and mix well.
Pour in the melted chocolate and butter and stir until combined.
Tip into your prepared baking tray, spreading it out to the edges.
Bake for 20-25 minutes.
Cut into squares or slices and sieve icing sugar over the top.

This was the first time I had used coconut flour, so wasn’t sure what to expect. Recipe was easy to follow and the smell from the kitchen as the traybake was cooking was amazing with the subtle aroma from the coconut and chocolate. Turned out beautiful and were a huge hit in the family, will definitely be making again.

Can't praise this enough. I've never made good brownies before but this batch came out perfectly - slightly gooey in the middle. The taste is sublime - can't beat coconut and chocolate. So easy to prepare too.

Totally love this recipe! I've lost count now how many times I've made it! It's a real family favourite and the best part is that I get to eat chocolate cake and the family can't tell the difference between that and regular brownies! Winner all around us say!
